Strawberry Adamame & Quinoa Salad

Makes 2 servings

 

1 cup of red quinoa (cooked)

4 tbsp. of white balsamic vinegar (you can use regular balsamic if you cannot find white)

1/2 tbsp of olive oil

1/2 cup of frozen shelled Adamame (cooked)

1/2 cup of strawberries (halved)

1 tbsp of shredded coconut

2 tbsp. of sliced almonds

 

Whisk the vinegar and oil in a small bowl to make the dressing.  Add in the rest of the ingredients and mix gently.  Store in the refrigerator for at least an hour before eating.
