Southestern Chicken and Black Bean Salad

Makes 4 servings

 

10 cups of torn romaine lettuce leaves
1 (15 ounce) can of no-salt-added black beans, rinsed and drained

1½ cups of chopped cooked chicken (grilled preferred or you can use a plain rotisserie chicken)

1½ cups of red cherry tomatoes, halved
1/4  cup of Walden Farms Chipotle salad dressing (or you can use any lite dressing of your choice)

1½ tsp of chili powder

½ tsp of ground cumin

½ cup of broken baked tortilla chips
2 tbsp of cilantro or parsley

Combine romaine, black beans, chicken, and tomatoes in a large bowl.  Whisk together salad dressing, chili powder, and cumin in a small bowl.  Pour dressing over salad; toss gently to coat. Sprinkle with tortilla chips and chopped cilantro (or parsley).
