12 Dec Homemade Pumkpin Spice Bagels
Makes 4 servings/bagels. Each bagel is 170 calories each and about 35 grams of carbs each.
1 ¼ cups of self-rising flour (whole wheat OR gluten-free flour)
1 cup of pumpkin puree
1 teaspoon of pumpkin pie spice OR all-spice
1 teaspoon of melted coconut oil
Preheat oven to 375°F. Line a large baking sheet with parchment paper. Place self-rising flour in a stand mixer fitted with the dough hook. Add pumpkin and the spice and mix at low speed until a smooth dough forms (about 3 minutes or so). Add a few tablespoons water if the dough seems dry or a few tablespoons flour if it is sticky. Shape dough into a disk, then divide into 4 equal pieces. Using your hands, roll each piece into a rope (9-10 inches long and ¾ inch wide). Shape each rope into a bagel and place on the prepared baking sheet. Brush bagels with oil and sprinkle with additional pumpkin pie spice if you want. Bake until nicely browned on the bottom and lightly browned on top (about 25 minutes). Let cool completely before serving.
