Pumpkin Pie Bites


  • 1 cup of 100% Pure Pumpkin Puree
  • 1/2 cup of Natural Roasted Almond Butter
  • 2 tsp of vanilla extract OR vanilla flavored Stevia Extract
  • 2 tsp of Ground Cinnamon
  • 1 cup of quinoa flakes
  • 1/2 cup of instant oats


  1. In a stand mixer bowl fitted with a beater attachment, add the pumpkin puree, almond butter, stevia extract, and ground cinnamon.  Mix on low speed.
  2. While mixing, add the quinoa flakes and oats.
  3. Scrape down the sides of the bowl and mix one last time. Cover the bowl and refrigerate for 30 minutes.
  4. Line a cookie sheet with parchment paper. Use a cookie scoop to portion out the dough and place on the prepared cookie sheet.  Roll the dough into balls.
  5. Serve immediately or cover and refrigerate for later!
