Makes 4 servings:
2 large chicken breasts (boneless & skinless) – cut breasts in half to make 4 halves
1/2 cup of low-fat mayonnaise
1 cup of whole wheat bread crumbs OR 1 cup of crushed Bran Flakes
Black ground pepper to taste
Preheat oven to 425 degrees. Grease a shallow baking dish. Coat chicken on all sides with mayonnaise, and roll in bread crumbs OR Bran Flakes until coated. Place coated breasts into the prepared pan. Bake uncovered for 30 minutes in the preheated oven, or until chicken is no longer pink in the middle and the juices run clear.
