Meatloaf Muffins!

1lb of lean ground beef, chicken, or turkey
Butter OR oil cooking spray
1 egg
1 onion (chopped finely)
1 celery stalk (chopped finely)
1 cup of sliced mushrooms
1/4 cup of bread crumbs
1/4 cup of milk
Spices: Oregano, black pepper, garlic powder, paprika,or whatever else you like (make it for your own taste)
Topping: Salsa, ketchup, hot sauce, OR barbecue sauce

Preheat oven to 350. Spray the muffin trays with butter or oil spray. Place the meat in a large bowl and mix it with the egg. Then add the spices and mix again. In a small separate bowl, put in the bread crumbs and then pour the milk over the bread crumbs. Mix it in well to make a muddy bread crumb/milk mixture. Then add that mixture to the meat mixture. Add the chopped onions and celery. Once all mixed in well, load up muffin tray slots with the meat (load to rim). Top with your favorite sauce, then top with the mushrooms. Bake in oven for 25-30 minutes. Enjoy!
